Cinnamon, apple and raisin compote with cinnamon cream

Ingredients:
  • 1 lemon
  • 625mls (2 1/2 cups) water
  • 150g (3/4 cup) firmly packed brown sugar
  • 3 cinnamon sticks
  • 4 Golden Delicious apples
  • 80g (1/2 cup) raisins
  • 200mls thick cream
  • 12.00 gm icing sugar
  • 1.25 gm ground cinnamon
Instructions:
  • Peel 3 strips of lemon zest using a vegetable peeler and add them with 1 tablespoon of lemon juice to the water, brown sugar, and cinnamon sticks in a medium saucepan.
  • Stir over medium heat until sugar completely dissolves, then bring to a boil and simmer for 5 minutes.
  • Peel, core, and cut each apple into 8 wedges. Then, gently poach the apple wedges over low heat for 5 minutes.
  • Stir in the raisins and simmer until the apple is tender, about 5-10 minutes more.
  • Whisk together cream, icing sugar, and ground cinnamon until well combined to create a delectable cinnamon cream. Serve the compote accompanied by the fragrant cinnamon cream.
