Creamy vanilla ice cream and whipped cream blended into a luscious egg custard, poured into a flaky crust and chilled. Garnish with sweet strawberries.
Ingredients:
  • 1.5 (.25 ounce) packages unflavored gelatin
  • 8 tablespoons cold water
  • 9 tablespoons white sugar
  • 2.25 tablespoons cornstarch
  • 1.5 cups milk
  • 0.75 cup vanilla ice cream
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 1 (9 inch) pie crust, baked
Instructions:
  • Soak gelatin in cold water until softened. Heat milk until scalded.
  • Combine sugar and cornstarch in a mixing bowl. Blend in eggs until fully incorporated. Stir in milk and softened gelatin, continuously stirring.
  • Prepare the custard in a double boiler until it thickens and coats the back of a spoon. Remove from heat and stir in the ice cream while the custard is still hot. Allow it to cool completely before serving.
  • Stir in vanilla for a delightful flavor boost. Whip the cream until light and fluffy, then gently combine 1 1/2 cups with the chilled custard. Fill the pie shell with the delectable mixture and chill until firm. Top your pie with the rest of the whipped cream for a heavenly finish.
