Indulge in a warm vanilla berry pudding for a cozy winter treat.
Ingredients:
  • 225.00 gm self-raising flour
  • 161.25 gm caster sugar
  • 50g butter, melted
  • 193.13 gm milk
  • 8.80 gm vanilla extract
  • 125.00 ml frozen blueberries
  • 247.50 gm boysenberry jam
  • 187.50 gm boiling water
  • 53.75 gm caster sugar
  • 82.50 gm boysenberry jam
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Mix flour, sugar, butter, milk, and vanilla extract in a bowl until smooth. Gently fold in blueberries. Divide jam evenly among six 1 cup-capacity ovenproof dishes, then top with the batter.
  • Prepare the sauce by combining boiling water, sugar, and jam in a heatproof jug. Stir well to combine before distributing the sauce evenly over the batter in each dish.
  • Bake for 25-30 minutes until perfectly set, then let stand for 2-3 minutes before serving.
