Vanilla pudding pie with graham cracker crust and fluffy meringue topping - a delicious crowd favorite!
Ingredients:
  • 1 cup graham cracker crumbs
  • 0.25 cup white sugar
  • 0.33333334326744 cup butter, melted
  • 2 cups milk
  • 0.5 cup white sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon all-purpose flour
  • 1 pinch salt
  • 3 eggs, separated
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Combine graham cracker crumbs, sugar, and melted butter in a bowl, then press into a 9-inch pie dish to create a delicious crust.
  • Bake in a hot oven until set, for 5 to 10 minutes.
  • In a saucepan over medium heat, whisk together milk, 1/2 cup sugar, cornstarch, flour, and salt until it boils, stirring constantly. Boil for 2 minutes, then add egg yolks while stirring. Cook and stir until thickened for about 1 more minute, then remove from heat. Stir in 1 tablespoon butter and vanilla extract. Let the vanilla mixture cool for 10 minutes before pouring into prepared crust. Allow the pie to come to room temperature.
  • Preheat your oven to a piping hot 425 degrees F (220 degrees C).
  • In a glass or metal bowl, beat the egg whites until foamy. Slowly add 1/4 cup sugar while continuing to beat until stiff peaks form. Confirm by lifting your beater or whisk straight up to see sharp peaks. Spread the meringue over vanilla pudding.
  • Place in a preheated oven until lightly browned, approximately 5 minutes. Allow to cool to room temperature.
  • Chill in the fridge for approximately 3 hours before enjoying.
