Indulge in a luscious homemade vanilla ice cream at your family gathering.
Ingredients:
  • 750ml thickened cream
  • 250ml milk
  • 1 vanilla bean, split
  • 8 free range egg yolks
Instructions:
  • In a medium saucepan, blend the cream and milk together. Scrape the vanilla seeds from the bean using a small, sharp knife and add them, along with the bean, to the cream mixture. Simmer over medium heat until it reaches a gentle simmer (avoid boiling).
  • Thicken and lighten the egg yolks and sugar in a bowl using an electric mixer.
  • Pour the hot cream mixture slowly into the egg mixture while whisking continuously. Transfer back to the pan and cook over low heat for 6-8 mins until the custard thickens and coats the back of the spoon. Be cautious not to overheat to prevent the custard from splitting.
  • Pass the custard mixture through a fine sieve into a shallow metal container. Cover with foil and freeze for 6 hours, or until firm.
  • Break up ice-cream with a metal spoon, then blend in a food processor until smooth. Transfer to a container, cover with foil, and freeze for 4-6 hours until firm.
