Vanilla Wafer Cake II

Kid-friendly cookie cake made with crushed cookies instead of flour.
Ingredients:
  • 1 cup butter
  • 6 eggs
  • 2 cups white sugar
  • 1 (12 ounce) package vanilla wafers, crushed
  • 1 (8 ounce) package flaked coconut
  • 1 cup chopped pecans
Instructions:
  • Preheat the oven to 300°F (175°C) and generously grease and flour a bundt pan.
  • Mix together the butter or margarine with sugar until smooth. Incorporate the eggs one at a time, ensuring each is well beaten in. Alternate folding in crushed vanilla wafers with milk. Blend in coconut and pecans until fully mixed. Transfer batter into the prepared pan.
  • Bake for 1 1/2 hours, then allow to cool.
