Vanilla wafer crust cupcakes with creamy sweetened cheese topping.
Ingredients:
  • 16 vanilla wafer cookies
  • 2 (8 ounce) packages cream cheese, softened
  • 0.75 cup white sugar
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare the muffin pans with cupcake papers.
  • Start by placing a wafer cookie at the bottom of each cupcake paper. Then, in a medium bowl, mix together cream cheese and sugar until creamy. Add eggs and vanilla, beat until smooth, and pour the mixture over the wafers in the cupcake papers.
  • Bake in a hot oven for 15 minutes until golden and firm.
