Indulgent veal tortellini carbonara featuring Perfect Italiano cheese.
Ingredients:
  • 375g pack veal tortellini
  • 18.20 gm olive oil
  • 1 brown onion, finely chopped
  • 4 rashers shortcut bacon, chopped
  • 300g swiss brown mushrooms, thinly sliced
  • 2 egg yolks
  • 300ml thickened cream
  • 62.50 ml fresh continental parsley, finely chopped
  • 125.00 ml shaved Perfect Italiano™ Parmesan cheese block
Instructions:
  • Cook the tortellini in a large saucepan of boiling water according to the instructions on the packet. Drain and set aside.
  • Heat olive oil in a large frying pan over medium-high heat.
  • Combine the finely chopped brown onion and chopped bacon in the pan. Stir and cook for 5 minutes until the bacon turns golden. Ensure the onions are soft and translucent, not too brown.
  • Sauté the sliced Swiss brown mushrooms for 3-5 minutes until they begin to soften, allowing their deep, earthy flavor to shine.
  • Turn down the heat to low. Grate ½ cup of bold-flavored Perfect Italiano™ Parmesan cheese. Combine egg yolks with cream, then mix in parsley and three quarters of the grated Perfect Italiano™ Parmesan. Pour this mixture into the pan and simmer for 2 minutes until the cheese is melted.
  • Pour the velvety sauce over the tortellini and sprinkle the remaining Perfect Italiano™ Parmesan cheese on top for a delicious finish.
