Vegan Agave Cornbread Muffins

Whole-wheat vegan cornbread sweetened with agave syrup.
Ingredients:
  • 0.5 cup cornmeal
  • 0.5 cup whole-wheat pastry flour
  • 0.5 teaspoon baking soda
  • 0.5 cup applesauce
  • 0.5 cup soy milk
  • 0.25 cup agave nectar
  • 2 tablespoons canola oil
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C) and gently grease a muffin pan.
  • In a large bowl, mix cornmeal, flour, baking soda, and salt. Add applesauce, soy milk, and agave nectar, stirring well. Gradually incorporate the oil while stirring. Transfer the mixture to the muffin pan.
  • Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
