Sauteed chickpeas with kale, cilantro, and lime create a zesty vegan appetizer.
Ingredients:
  • 2 cups chopped kale
  • 1 (15 ounce) can chickpeas (garbanzo beans), drained and rinsed
  • 0.5 cup frozen fava beans, thawed
  • 1 tablespoon olive oil
  • 0.5 onion, chopped
  • 1 small jalapeno pepper, minced
  • 0.25 cup minced cilantro
  • 0.25 teaspoon curry powder
  • 1 small lime, halved
  • 0.25 teaspoon coarse salt
Instructions:
  • Set up your steamer by placing the insert into a saucepan and adding water, ensuring it's just below the steamer. Bring the water to a boil. Add kale, cover, and steam for approximately 3 minutes until tender. Rinse the kale under cold water and drain well.
  • Combine chickpeas and fava beans in a bowl.
  • In a skillet over medium heat, sauté onion and jalapeño in olive oil until softened, about 5 minutes. Stir in chickpeas, kale, cilantro, and curry powder; heat through for 2 to 3 minutes.
  • Squeeze half a lime over the chickpea mixture and divide it onto 4 plates. Cut the other lime half into 4 wedges and squeeze one over each serving; then season with salt.
