Whip up delicious vegan tacos with zucchini, tomato, and spinach on corn tortillas.
Ingredients:
  • 1.5 teaspoons coconut oil
  • 0.5 zucchini, chopped
  • 0.25 tomato, chopped
  • 0.25 small onion, chopped
  • 1 tablespoon canned chopped green chiles
  • 1 cup fresh spinach
  • 2 teaspoons ground chipotle pepper (such as Mrs. Dash Southwest Chipotle Seasoning Blend®)
  • 3 (6 inch) yellow corn tortillas
Instructions:
  • In a skillet, warm coconut oil over medium-low heat. Add zucchini, tomato, onion, and green chiles. Cook until tender, about 5 to 7 minutes, stirring occasionally. Mix in spinach and chipotle seasoning until well combined.
  • Place tortillas in a damp paper towel and microwave for 30 seconds to warm. Add your favorite filling on top of the tortillas.
