Vegan soy-battered zucchini sticks with seasoned breadcrumbs, a light and delicious appetizer or side dish.
Ingredients:
  • 1 teaspoon olive oil
  • 0.25 cup water
  • 2 tablespoons soy flour
  • 0.33333334326744 cup plain bread crumbs
  • 1 teaspoon herbes de Provence
  • ground black pepper to taste
  • 1 dash cayenne pepper
  • 2 zucchinis, quartered and cut into spears
  • 1 tablespoon vegan mayonnaise
  • 1 tablespoon ketchup
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously coat a large baking sheet with olive oil.
  • Combine water and soy flour in a bowl until a thick, pancake-like batter forms.
  • Combine bread crumbs with herbes de Provence, garlic powder, salt, pepper, and cayenne pepper on a shallow plate, mixing well.
  • Coat zucchini spears in batter, then roll in bread crumb mixture. Arrange spears cut-side down in the same direction on the baking sheet.
  • Bake in the preheated oven until lightly golden, about 10 minutes. Flip spears and bake for another 10 minutes. Rotate spears to have the skin side down; bake until browned, about 5 minutes more.
  • Place the zucchini spears on a platter and serve them with vegan mayonnaise and ketchup.
