Delicious vegan peach and banana smoothie with zesty lemon verbena and creamy coconut milk - perfect for summer!
Ingredients:
  • 2 ripe peaches, chilled
  • 2 ripe bananas, peeled and frozen
  • 15 leaves fresh lemon verbena
  • 1 cup reduced-fat coconut milk
  • 1 lime, juiced
  • 1 tablespoon water, or more if needed
  • 4 cubes ice cubes
Instructions:
  • In a blender, puree peaches, bananas, lemon verbena, coconut milk, and lime juice until velvety. Add water if needed to achieve desired texture.
  • Fill 2 tall glasses with ice cubes and pour peach mixture over the top. Serve right away.
