Vegan Sugar and Spice Muffins

"Vegan muffins with aquafaba binder, rolled in cinnamon sugar, perfect when warm."
Ingredients:
  • cooking spray
  • 1.75 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 0.5 teaspoon salt
  • 0.33333334326744 cup white sugar
  • 0.33333334326744 cup avocado oil
  • 3 tablespoons aquafaba (chickpea water)
  • 0.5 cup white sugar
  • 0.5 teaspoon ground cinnamon
  • 0.5 cup vegan margarine (such as Earth Balance®), melted
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a muffin tin with cooking spray.
  • Combine the flour, baking powder, pumpkin pie spice, and salt in a small bowl.
  • Combine sugar, avocado oil, and aquafaba in a bowl, whisking until the sugar is fully dissolved. Gradually add the flour mixture, stirring until well combined.
  • Fill each cup of the prepared tin halfway with the batter using a spoon.
  • Bake in the oven until a toothpick inserted in the center comes out clean, approximately 20 minutes.
  • Mix sugar and cinnamon in a shallow dish to create the topping. Take the hot muffins out of the tin and dip them in melted margarine, then roll them in the cinnamon sugar mixture until coated. Serve while warm.
