Flavorful vegan breakfast sandwiches with tofu, spices, and veggies make mornings delicious and effortless.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 (12 ounce) package firm tofu, drained
  • 0.75 cup canned fire-roasted tomatoes, drained
  • 1 medium red bell pepper, diced
  • 0.5 medium yellow onion, diced
  • 1.5 tablespoons nutritional yeast
  • 1.5 tablespoons soy sauce
  • 0.5 teaspoon red pepper flakes
  • 0.25 teaspoon ground turmeric
  • 1 pinch salt to taste
  • 1 tablespoon vegan mayonnaise, or to taste
  • 5 sandwich buns, split
  • 1 cup fresh spinach
  • 1 avocado, sliced
Instructions:
  • In a large pan over medium heat, heat oil. Crumble tofu into 1-inch pieces and cook for 5 minutes, stirring occasionally. Stir in canned tomatoes and cook for 5-10 minutes until excess liquid evaporates. Add bell pepper and onion, cook until onion is translucent, about 5 minutes. Stir in garlic, nutritional yeast, soy sauce, red pepper flakes, paprika, turmeric, and salt. Cook and stir for an additional 2 minutes.
  • Evenly coat the sandwich buns with a layer of creamy mayonnaise, then add the flavorful tofu mixture, fresh spinach, and creamy avocado on top.
