Enjoy a flavorful vegan pot pie with roasted butternut squash, Yukon gold potatoes, mixed veggies, and fresh herbs - perfect for a simple and satisfying dinner!
Ingredients:
  • cooking spray
  • 0.5 butternut squash, peeled and cut into 1/2-inch cubes
  • 3 Yukon gold potatoes, cut into 1/2-inch cubes, or more to taste
  • 4 tablespoons olive oil
  • 0.5 large sweet onion, diced
  • 3 cloves garlic, minced, or more to taste
  • 5 tablespoons all-purpose flour
  • 1 (32 fluid ounce) container vegetable broth
  • 2 tablespoons vegan Worcestershire sauce
  • 1 teaspoon salt, or more to taste
  • 1 teaspoon ground black pepper, or more to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon ground thyme
  • 0.75 cup water
  • 1 (10 ounce) package frozen mixed vegetables
  • 1 vegan pie crust
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and lightly grease a baking sheet with cooking spray.
  • Arrange the squash and potatoes on the baking sheet.
  • After 15 minutes in the preheated oven, remove and let it rest.
  • In a sturdy saucepan, heat olive oil over medium-high heat. Saute onion and garlic until onion is translucent, approximately 7 minutes. Stir in flour and cook until a thick paste forms, about 2 to 3 minutes, stirring constantly to avoid burning.
  • Combine broth with the onion-flour mixture and whisk vigorously until thickened and boiling, approximately 7 minutes. Stir in Worcestershire sauce, salt, pepper, oregano, and thyme. Pour in water and simmer. Add baked squash and potatoes, cooking over medium heat until tender when pierced with a fork, around 10 minutes.
  • Add frozen vegetables to the flavorful broth and heat through for 3 to 4 minutes. Transfer the mixture to a large baking dish. Roll out the pie dough to the size of the dish and place it on top, making some steam vents with cuts.
  • Bake in the hot oven until the filling is bubbling and the crust is golden brown, approximately 30 minutes.
