Vegetable Kabobs with Mexican Cheese Sauce

30-Minute Grilled Veggie Kabobs with Salsa Cheese Sauce, a taste of Mexico ready fast!
Ingredients:
  • 12 small red potatoes
  • 2 tablespoons water
  • 2 medium zucchini, cut into 1-inch pieces
  • 12 whole mushrooms
  • 12 cherry tomatoes
  • 2 tablespoons vegetable oil
  • 1 jar (8 ounces) mild salsa-flavor process cheese sauce or spread
Instructions:
  • Preheat grill. In a 2-quart microwave-safe casserole dish, add potatoes and water. Cover and microwave on High for 3 to 6 minutes or until partially cooked. Drain the water.
  • Skewer the potatoes, zucchini, mushrooms, and tomatoes onto 6 metal skewers, making sure to alternate the vegetables and leave space between each piece. Brush the vegetables with oil for a delicious finish.
  • Grill covered at medium heat for 15 minutes, brushing once with oil, until zucchini is crisp-tender.
  • While the kabobs are grilling, warm up the cheese sauce according to the directions on the jar. Serve the cheese sauce with the kabobs.
