Spicy vegetable medley with potatoes, carrots, peas, and beans cooked in a savory blend of onions, tomatoes, and garam masala.
Ingredients:
  • 2 potatoes, peeled and cubed
  • 1 carrot, chopped
  • 10 French-style green beans, chopped
  • 1 quart cold water
  • 0.5 cup frozen green peas, thawed
  • 1 teaspoon salt
  • 0.5 teaspoon ground turmeric
  • 1 tablespoon vegetable oil
  • 1 teaspoon mustard seed
  • 1 teaspoon ground cumin
  • 1 onion, finely chopped
  • 2 tomatoes - blanched, peeled and chopped
  • 1 teaspoon garam masala
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon chili powder
  • 1 sprig cilantro leaves, for garnish
Instructions:
  • Soak potatoes, carrots, and green beans in cold water while you prep the other vegetables, then drain.
  • Arrange the potatoes, carrots, green beans, and peas in a microwave-safe dish. Sprinkle with salt and turmeric. Microwave on high for 8 minutes.
  • In a large skillet over medium heat, sizzle mustard seeds and cumin in hot oil until popping, then sauté onion until transparent. Add tomatoes, garam masala, ginger, garlic, and chili powder; sauté for 3 minutes. Mix in cooked vegetables, sauté for 1 more minute, then top with fresh cilantro leaves before serving.
