Wholesome veggies and fluffy egg bake together in portable muffin cups for a convenient breakfast bite.
Ingredients:
  • cooking spray
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 0.75 cup liquid egg substitute
  • 0.75 cup shredded reduced-fat Cheddar cheese
  • 0.25 cup diced onion
  • 0.25 cup chopped green bell pepper
  • 3 drops hot pepper sauce
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare a 12-cup muffin pan by lining it with foil baking cups and spraying them with cooking spray.
  • Combine fresh spinach, egg substitute, sharp Cheddar cheese, diced onion, chopped green bell pepper, and a dash of hot pepper sauce in a mixing bowl. Fill each muffin cup with an even portion of the spinach mixture.
  • Bake until a knife comes out clean when inserted in the center, approximately 20 minutes in the preheated oven.
