Try a zesty lemon pilaf with fragrant vegetable stock for a tastier twist on this delicate grain dish.
Ingredients:
  • 1 tablespoon olive oil
  • 0.5 onion, chopped
  • 1 stalk celery, chopped
  • 2 carrots, diced
  • 0.5 cup quinoa
  • 1 cup hot water
  • 1 bay leaf
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 0.5 cup frozen green peas, thawed
  • salt to taste
  • ground black pepper to taste
Instructions:
  • Heat oil in a saucepan over medium heat. Sauté onion, celery, and carrots for 10 minutes until tender.
  • Rinse the quinoa under cold water using a strainer and drain well. Stir it into the vegetables for 1 minute. Add water, bay leaf, lemon rind, and juice. Bring to a boil, then cover and simmer on medium-low heat for 15 to 20 minutes until quinoa is tender and liquid is absorbed.
  • Remove the bay leaf, mix in peas, and season with salt and pepper to taste. Serve hot.
