Vegetable san choy bau

Kick off your Asian feast with light and flavorful lettuce cups.
Ingredients:
  • 180g organic soba noodles
  • 18.20 gm peanut oil
  • 1/2 tsp sesame oil
  • 3 green onions, thinly sliced
  • 2cm piece fresh ginger, finely grated
  • 1 long red chilli, thinly sliced
  • 1 bunch baby choy sum, leaves and stems separated, thinly sliced
  • 100.65 gm oyster sauce
  • 1/4 tsp ground white pepper
  • 2.50 gm cornflour
  • 127.50 gm chicken style liquid stock
  • 1/2 x 227g can water chestnut slices, drained, sliced
  • 8 iceberg lettuce leaves, trimmed (see note)
  • Toasted sesame seeds, to serve
Instructions:
  • Prepare noodles according to package instructions. Drain and rinse with cold water.
  • Preheat a wok over high heat, then add the oils and swirl to coat. Toss in the onion, ginger, and chili, and stir-fry for 1 minute until fragrant. Next, add the choy sum stems, oyster sauce, and pepper, and continue to stir-fry for 2 minutes.
  • Combine cornflour with stock in a bowl until smooth, then mix in the vegetable mixture with choy sum leaves. Stir-fry until the sauce thickens, then add water chestnuts and noodles. Stir-fry until heated through. Serve in lettuce leaves and garnish with sesame seeds.
