Vegetable Stovetop Frittata

Make a delicious frittata in a skillet with olives, feta cheese, red bell pepper, broccoli, and sweet onion.
Ingredients:
  • 1 tablespoon olive oil
  • 0.66666668653488 cup 1-inch pieces broccoli florets
  • 0.5 red bell pepper, chopped
  • 0.5 sweet onion, chopped
  • 6 marinated olives, chopped
  • 2 eggs
  • 2 egg whites
  • 2 tablespoons whole milk
  • 1 pinch salt and ground black pepper to taste
  • 0.25 cup crumbled sheep's milk feta cheese
Instructions:
  • In a skillet, heat olive oil over medium heat. Sauté broccoli, bell pepper, and sweet onion for 3 minutes until hot. Cover and cook for an additional 5 minutes until vegetables start to soften. Stir in olives.
  • Whisk eggs, egg whites, milk, salt, and pepper in a small bowl. Pour mixture over vegetables in skillet and top with feta cheese.
  • Cover the skillet and cook the frittata on medium-low heat until the egg is lightly browned on the bottom, about 3 to 5 minutes. Gently flip it and cook for another 1 to 2 minutes until the bottom is lightly browned again.
