Vegetable sung choi bao

Ingredients:
  • 1 425g can young corn cuts, drained
  • 1 280g can mushrooms, drained
  • 1 230g can water chestnuts, drained
  • 3 green shallots, trimmed, chopped
  • 9.20 gm olive oil
  • 15.90 gm soy sauce
  • 1 tsp finely chopped fresh ginger
  • 4 whole iceberg lettuce inner leaves, washed, dried
  • Coriander leaves, to serve
Instructions:
  • Add the corn, mushrooms, water chestnuts, and green shallots to a food processor and pulse until coarsely chopped.
  • In a heated wok or non-stick frying pan, add the vegetable mixture, garlic, soy sauce, and ginger. Stir-fry for 2-3 minutes until everything is heated through.
  • Divide the mixture evenly into the lettuce cups, then generously sprinkle with fresh coriander leaves before serving while still warm.
