Cheesy baked ziti loaded with eggplant, zucchini, tomatoes, and bell peppers.
Ingredients:
  • cooking spray
  • 2 tablespoons olive oil
  • 2 cups cubed eggplant
  • 2 cups cubed zucchini
  • 2 large tomatoes, chopped
  • 1 medium red bell pepper, cubed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced, or more to taste
  • 2 teaspoons Italian seasoning
  • 1 (16 ounce) package ziti pasta
  • 1 (32 ounce) jar spaghetti sauce
  • 1 (15 ounce) can Italian-style diced tomatoes
  • 0.5 cup non-dairy Parmesan cheese substitute
  • 1 (16 ounce) package sliced fresh mozzarella cheese
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously spray a 3-quart baking dish with cooking spray.
  • In a sizable saute pan, warm some oil over medium heat. Toss in eggplant, zucchini, tomatoes, bell pepper, onion, and garlic. Cook with sporadic stirring until veggies are tender, around 10 minutes. Sprinkle with Italian seasoning and salt, then mix well.
  • While waiting, prepare a large pot of gently salted boiling water. Cook the ziti, stirring occasionally, until just tender, about 11 minutes. Drain and rinse under cold water.
  • Combine the spaghetti sauce and diced tomatoes in a medium bowl.
  • Spread 1/3 of the sauce mixture in the bottom of the casserole dish. Layer with half of the ziti, half of the vegetable mixture, half of the Parmesan substitute, half of the mozzarella slices, half of the remaining sauce, all of the remaining ziti, all of the remaining vegetables, all of the remaining Parmesan substitute, and all of the remaining sauce. Keep the extra mozzarella slices aside.
  • Bake uncovered until bubbly for 25 to 30 minutes. Top with remaining mozzarella slices, bake until cheese is melted and slightly browned for an additional 10 to 15 minutes.
