Delicious brat bar with saffron mayo, pickled cabbage, and honey mustard appeals to all diets.
Ingredients:
  • 2 pounds Pure Farmland® Dinner Links (Mild Italian variety)
  • 3 tablespoons whole grain mustard
  • 0.25 cup Dijon mustard
  • 1 tablespoon honey
  • 2 teaspoons lemon juice
  • 1 pinch crumbled saffron
  • 1 medium garlic clove, peeled and grated on a microplane
  • 0.5 cup olive oil mayonnaise
  • 3 cups thinly sliced red cabbage, core removed
  • 0.25 cup rice wine vinegar
  • 0.5 teaspoon white sugar
  • 1 cup kimchi
  • 0.5 cup thinly sliced scallions (on the bias), white and green parts
  • 1 French baguette, cut into 2-inch slices
Instructions:
  • Preheat your oven to 375°F.
  • Preheat a large, well-seasoned grill pan over medium-high heat. Pat the links dry with a paper towel. Grill the links on each side until dark brown grill marks appear, about 2 to 3 minutes per side. Transfer to a foil-lined oven and bake for 8 to 10 minutes, or until fully cooked and no longer pink in the center when sliced.
  • In a small bowl, mix together both mustards and honey until fully combined. Enjoy right away or store in the fridge for up to 1 week.
  • In a small bowl, marry lemon juice, saffron, and garlic. Allow to infuse for 10 minutes. Stir in mayonnaise until fully incorporated. Enjoy right away or chill for up to 3 days.
  • Combine red cabbage, vinegar, salt, and sugar in a bowl. Massage and mix well. Rest for 30 minutes, stirring every 10 minutes. Serve fresh or refrigerate for 2 days.
  • Place the cooked sausages on a serving board alongside whole grain honey mustard, saffron aioli, pickled red cabbage, kimchi, scallions, and a French baguette. Serve promptly.
