Delicious veggie noodle stir-fry ready in just 30 minutes!
Ingredients:
  • 450g pkt shelf-fresh hokkien noodles
  • 80ml (1/3 cup) black bean sauce
  • 80ml (1/3 cup) salt-reduced soy sauce
  • 2 tsp sesame oil
  • 14.40 gm honey
  • 27.60 gm vegetable oil
  • 1 brown onion, cut into thin wedges
  • 2 bunches broccolini, halved crossways
  • 2 celery sticks, thinly sliced diagonally
  • 200g pkt Chinese (honey soy) marinated tofu, cut into thin strips
  • 6.00 gm sesame seeds, toasted
  • Chopped fresh red chilli, to serve
Instructions:
  • In a large heatproof bowl, place the noodles and cover with boiling water. Allow to soak for 5 minutes. Gently separate the noodles using a fork or chopsticks, then drain well.
  • In a bowl, mix together the black bean sauce, soy sauce, sesame oil, and honey. Set aside for later use.
  • In a wok or large, deep frying pan over medium-high heat, heat 1 tablespoon of vegetable oil. Add the onion and stir-fry for 1 minute. Then, add the broccolini, celery, and garlic, and stir-fry for another 3-4 minutes until tender-crisp. Transfer the mixture to a bowl and set aside.
  • Add the tofu to the wok with the remaining 2 tsp oil. Cook for 3-4 minutes, stirring occasionally until heated through; it's okay if the tofu breaks up slightly.
  • Combine noodles, sauce mixture, and vegetables in the wok. Toss using 2 wooden spoons. Serve in bowls and sprinkle with sesame seeds and chili flakes.
