Wholesome black-eyed peas and rice blend in classic Hoppin' John for a lucky New Year's dish.
Ingredients:
  • 2.5 cups vegetable broth
  • 1 cup long grain rice
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 (15 ounce) cans black-eyed peas, rinsed and drained
  • 0.5 teaspoon Cajun seasoning
Instructions:
  • In a saucepan, let the broth and rice come to a boil. Lower the heat to medium-low, cover, and gently simmer until the rice is tender and has absorbed all the liquid, about 20 to 25 minutes.
  • In a pot, heat olive oil over medium-high heat. Sauté onion until translucent, about 5 to 7 minutes. Add cooked rice, black-eyed peas, and Cajun seasoning to the pot and stir to combine.
  • Cover the pot and simmer for 10 minutes to let the flavors meld together beautifully.
