Irresistible veggie-loaded pizza to win over picky eaters.
Ingredients:
  • 1 quantity Basic pizza dough (see notes)
  • 4.60 gm olive oil
  • 1 small brown onion, finely chopped
  • 1 garlic clove, crushed
  • 1 small zucchini, coarsely grated
  • 1/2 x 400g can diced tomatoes
  • 20.00 ml shredded fresh basil leaves
  • 1/2 medium red capsicum, thinly sliced
  • 1/2 medium green capsicum, thinly sliced
  • 120g bocconcini
  • 125.00 ml grated reduced-fat mozzarella cheese
Instructions:
  • Prepare the pizza dough and shape it on a greased baking tray. Preheat the oven to 240°C/220°C fan-forced.
  • In a saucepan over medium heat, sauté onion, garlic, and zucchini in oil until onion softens. Pour in tomatoes and bring to a boil. Reduce heat and simmer until sauce thickens, about 5 minutes. Stir in fresh basil before serving.
  • Spread the tomato mixture evenly over the pizza base. Add the capsicum, bocconcini, and mozzarella on top. Bake for 15 to 20 minutes until the cheese is melted and the base is crispy. Serve hot.
