Vegetarian tacos with roasted sweet potatoes, onions, corn, black beans, and spices in soft shells.
Ingredients:
  • 2 tablespoons olive oil, divided
  • 2 sweet potatoes, peeled and diced
  • 0.25 cup minced onion
  • 1 cup frozen corn, thawed
  • 1 tablespoon taco sauce
  • 1.5 teaspoons taco seasoning mix
  • 0.25 teaspoon ground coriander
  • 1 (15 ounce) can black beans, drained
  • 4 (8 inch) corn tortillas
Instructions:
  • Preheat oven to 375°F (190°C) for a perfectly cooked dish.
  • Drizzle the diced sweet potatoes in a bowl with 4 1/2 teaspoons of olive oil. Add garlic and salt, then toss to coat the potatoes evenly. Spread them out in a single layer on a rimmed baking sheet.
  • Roast in the preheated oven, gently tossing every 15 minutes, until perfectly tender, for about 40 minutes.
  • In a skillet over medium heat, sauté onions in 1 1/2 teaspoons of olive oil until translucent for 5 to 10 minutes. Add corn and cook until slightly browned for 5 to 8 minutes. Stir in taco sauce, taco seasoning, and coriander. Pour in water and simmer gently until slightly thickened for about 3 minutes.
  • Mix the roasted sweet potatoes and black beans into the skillet, ensuring they are evenly coated with the sauce. Spoon the mixture generously over the tortillas.
