Savory vegetarian taquitos featuring flavorful mushrooms, carrots, and squash for a satisfying dish loved by all, including meat enthusiasts.
Ingredients:
  • 1 cup sunflower oil, divided, or as needed
  • 1 vegetarian burger patty, crumbled
  • 1 (8 ounce) package mushrooms, finely chopped
  • 1 medium yellow squash, finely chopped
  • 1 carrot, finely chopped
  • 1 (1 ounce) package taco seasoning mix
  • 16 corn tortillas
  • 0.5 cup shredded Cheddar cheese
Instructions:
  • In a frying pan over medium-high heat, warm up 1/4 cup of oil. Add mushrooms, squash, carrot, and vegetarian patty. Saute until vegetables are tender and soft, about 7 to 10 minutes. Mix in taco seasoning and let it cool.
  • In a separate frying pan, heat 1 inch of oil over medium heat. Using tongs, dip a corn tortilla into the hot oil. Cook for 3 seconds on one side, flip, and cook for another 3 seconds. Transfer to paper towels to drain and cool. Repeat with the rest of the tortillas.
  • Mix the Cheddar cheese into the cooled filling. Spread 1 1/2 tablespoons of the filling down the center of a tortilla and roll it up tightly. Repeat with the rest of the tortillas and filling.
  • Working swiftly but carefully, gently lay as many taquitos as possible into the hot oil, ensuring the seam side is facing down. Let them cook until the bottoms turn a beautiful golden brown, which should take about 3 to 4 minutes. Carefully flip them over and continue cooking until the other side is also golden brown, about 3 to 4 minutes more. Once ready, transfer the taquitos to a paper towel to drain. Repeat this process for the remaining taquitos.
