Veggie Pita Pizza

Quick and easy homemade pizza for two!
Ingredients:
  • 1 pita bread (6 inches in diameter)
  • 2 to 4 tablespoons pizza sauce or pasta sauce
  • 1 small zucchini, chopped (1 cup)
  • 2 tablespoons chopped onion
  • 2 roma (plum) tomatoes, chopped (1/2 cup)
  • 2 tablespoons sliced ripe olives
  • 1/4 teaspoon salt
  • 1/8 teaspoon dried basil leaves
  • 1/4 cup shredded mozzarella cheese (1 ounce)
Instructions:
  • Using a knife, carefully split the pita bread into 2 rounds. Spread pizza sauce evenly on both bread halves and place them on small microwave-safe plates.
  • In a 2-cup microwavable casserole, combine zucchini and onion. Microwave uncovered on High for 2 minutes 30 seconds to 3 minutes until tender. Add tomatoes, olives, salt, and basil, then stir to combine.
  • Top bread halves with a generous amount of vegetables and cheese. Microwave on High, uncovered, for 45 to 60 seconds, or until heated through. Cut into wedges before serving.
