Kid-friendly veggie burgers: easy and delicious way to sneak in vegetables.
Ingredients:
  • 500g coliban potatoes, peeled, quartered
  • 125.00 ml frozen baby peas
  • 2 medium carrots, peeled, finely grated
  • 100g button mushrooms, finely chopped
  • 62.50 ml plain flour
  • 187.50 ml seasoned stuffing mix
  • 6 white bread rolls, halved
  • 6 butter lettuce leaves
  • 2 medium tomatoes, sliced
  • 6 slices tasty cheese
  • 82.50 gm Baxters Tomato Chutney with Red Pepper
Instructions:
  • Boil potatoes in a saucepan of salted water for 8 minutes. Add peas and continue boiling for 2 more minutes until potatoes are tender. Drain and transfer to a bowl. Mash thoroughly, then mix in carrots, mushrooms, flour, salt, and pepper. Combine well.
  • Shape potato mixture into 6 patties using your hands. Place stuffing mix on a plate, then coat the patties in the stuffing mix.
  • In a frying pan over medium heat, heat oil. Cook patties in batches for 2 minutes on each side until golden brown and cooked through. Place on a paper towel to drain.
  • Assemble by layering lettuce, tomato, patties, cheese, chutney on top bun bases, and sandwich with bun tops. Enjoy!
