Whip up a delicious potato bacon soup with onions, milk, and herbs for a comforting family meal.
Ingredients:
  • 2 tablespoons butter
  • 0.75 cup finely chopped onion
  • 2 cups peeled and diced potatoes
  • 1.5 cups water
  • 0.5 teaspoon dried dill weed
  • 0.25 teaspoon ground black pepper
  • 1.75 cups milk
  • 3 tablespoons real bacon bits
  • 1 tablespoon dried parsley, or to taste
Instructions:
  • In a large saucepan, melt butter over medium heat until bubbling. Sauté onion in the fragrant butter until golden brown, approximately 10 minutes. Introduce potatoes, water, dill weed, salt, and pepper to the mix. Let the flavors meld together as it comes to a gentle boil. Lower the heat and let it simmer until the potatoes are soft and the liquid is almost gone, for at least 30 minutes.
  • Combine milk and savory bacon bits into the creamy potato mixture until well incorporated, then bring to a gentle boil. Finish by removing from heat and delicately folding in fresh parsley to elevate the flavors of the soup.
