Very chocolate biscuits

Ingredients:
  • 165g (3/4 cup, firmly packed) dark brown sugar
  • 220g (1 cup) caster sugar
  • 200g unsalted butter, softened
  • 4.40 gm vanilla extract
  • 2 eggs
  • 260g (1 3/4 cups) plain flour
  • 100g (1 cup) Dutch cocoa
  • 100g dark couverture chocolate, finely chopped
  • 100g milk couverture chocolate, finely chopped
Instructions:
  • 1. Preheat the oven to 180°C. 2. In a bowl, cream sugars, butter, and vanilla with an electric mixer until light and fluffy. 3. Beat in eggs one at a time. 4. Sift in flour, cocoa, baking powder, and 1 teaspoon of salt. 5. Mix in dark and milk chocolate until combined.
  • Roll 1/2 tablespoonfuls of mixture into balls and place on baking paper-lined trays. Gently flatten with your palm and bake for 8 minutes. Allow biscuits to cool on trays.
