Delicious Vidalia onion pie with optional sweet red pepper and bacon bits, served with a fresh salad and homemade lemonade. Top with a couple of onion rings for a beautiful presentation. Perfect for summer nights!
Ingredients:
  • 6 Vidalia onions, thinly sliced
  • 4 eggs, beaten
  • 1 cup sour cream
  • 0.5 cup unsalted butter
  • 0.25 cup grated Parmesan cheese
  • 1 pinch paprika
  • 2 tablespoons hot sauce
  • 2 (9 inch) pie shells, baked
  • 0.5 cup grated Parmesan cheese for topping
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • Cook onions in butter in a skillet over medium heat for 10 minutes until they are translucent and soft, stirring frequently. Save the flavorful juices.
  • Combine onions, eggs, and sour cream in a large bowl. Mix in onion juices, butter, cheese, salt, pepper, and hot sauce to your liking until well combined. Pour the mixture into the 2 pie shells.
  • Top pies with a generous amount of grated cheese and paprika. Bake in a preheated oven for 20 minutes, then reduce the temperature to 350°F (175°C) and continue baking for 30-40 minutes until lightly browned. Allow to cool briefly before slicing and serving.
