Crispy sweet onion straws: Buttermilk-soaked onions coated in seasoned flour and fried until golden perfection.
Ingredients:
  • 2 cups buttermilk
  • 2 large sweet onions (such as Vidalia®), very thinly sliced and separated into rings
  • 2 cups all-purpose flour
  • 2 tablespoons cornmeal
  • 1 tablespoon salt
  • 1 tablespoon ground black pepper
  • 2 teaspoons cayenne pepper
  • 0.5 teaspoon paprika
  • 1 quart vegetable oil for frying, or as needed
Instructions:
  • In a bowl, pour the buttermilk and add the onion slices. Cover the bowl with plastic wrap and refrigerate for 1 hour.
  • Preheat oil in a deep-fryer or large saucepan to 400°F (200°C).
  • In a bowl, combine flour, cornmeal, salt, black pepper, cayenne pepper, and paprika. Take onions out of buttermilk, coat them in the flour mixture, and shake off any extra coating.
  • Fry onion rings in hot oil until they turn golden brown, for about 3 to 4 minutes. Then, use a slotted spoon to transfer the rings to a plate lined with paper towels to drain excess oil.
