Decadent Austrian chocolate-nut cake without baking powder, can be made with walnuts or hazelnuts.
Ingredients:
  • 1.25 cups margarine
  • 1.25 cups white sugar
  • 4 eggs
  • 1 cup all-purpose flour
  • 1 cup cornstarch
  • 1 cup ground hazelnuts
  • 6 tablespoons unsweetened cocoa powder
  • 1 tablespoon confectioners' sugar
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a loaf pan.
  • Combine margarine and sugar in a bowl, use an electric mixer to blend until smooth. Add eggs one at a time, mixing thoroughly after each addition.
  • Combine flour, cornstarch, hazelnuts, and cocoa powder in a separate bowl, then swiftly mix into the margarine mixture. Transfer the batter into the greased loaf pan.
  • Once the oven has been preheated, bake the mixture until a toothpick inserted in the center emerges clean, approximately 1 hour. After baking, allow it to cool on a wire rack for 10 minutes. Gently loosen the edges by running a table knife around the pan. Carefully invert it onto a serving plate or cooling rack. Ensure it cools entirely before dusting with confectioners' sugar.
