Delicately dusted with powdered sugar, these melt-in-your-mouth cookies are perfect with a warm cup of coffee or as the highlight of your Christmas cookie platter. The secret ingredient? Almond meal adds a delicate crumb, while a splash of almond extract enhances the flavor. You'll be making these crescent moons a holiday tradition for years to come.
Ingredients:
  • 1 2/3 cups Gold Medal™ all-purpose flour
  • 2/3 cup almond meal
  • 1/4 teaspoon kosher (coarse) salt
  • 1 cup butter, softened
  • 1/3 cup granulated sugar
  • 1 cup powdered sugar
Instructions:
  • Preheat oven to 350°F and line 2 large cookie sheets with parchment paper.
  • In a small bowl, combine flour, almond meal, and salt, stirring thoroughly with a wire whisk. In a large bowl, cream together butter and granulated sugar with an electric mixer on medium speed until light and fluffy, approximately 4 minutes. Slowly incorporate the flour mixture into the butter mixture, beating until well combined. Chill in the refrigerator for 10 minutes.
  • Take the dough and form it into 40 (2-inch) logs, then bend them into crescent shapes. Arrange the crescents 2 inches apart on baking sheets. Bake for 12 minutes, or until the edges turn a light golden brown. Transfer the cookies from the baking sheets to cooling racks and dust them with powdered sugar.
