Ingredients:
  • 2 cups all-purpose flour
  • 1 cup butter
  • 1 cup hazelnuts, ground
  • 0.5 cup sifted confectioners' sugar
  • 0.125 teaspoon salt
  • 2 cups sifted confectioners' sugar
  • 1 vanilla bean
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect cooking temperature.
  • In a large mixing bowl, blend flour, butter, nuts, 1/2 cup confectioners' sugar, salt, and vanilla until fully combined. Form dough into a ball, cover, and chill in the fridge for 1 hour.
  • Prepare the vanilla sugar by splitting the vanilla bean lengthwise with a sharp knife, scraping out the seeds, and mixing them with sugar. Cut the pod into 2-inch pieces and add them to the sugar mixture.
  • Take the dough out of the refrigerator and shape into 1-inch balls. Roll each ball into a 3-inch long small roll. Space the rolls 2 inches apart on an ungreased cookie sheet, and shape each one into a crescent.
  • Place in the preheated oven and bake for 10-12 minutes until fully set but not browned.
  • After resting for 1 minute, transfer the cookies from the baking sheets onto a large piece of aluminum foil. Sprinkle them with the sugar mixture, then gently flip them to coat both sides. Let the cookies cool completely and store them in an airtight container at room temperature. When ready to serve, sprinkle more vanilla-flavored sugar on top.
