Vietnamese chicken baguettes

Try my mouthwatering Vietnamese Chicken Baguettes by Dani Venn.
Ingredients:
  • 1/2 roast chicken, meat shredded
  • 76.25 gm fish sauce
  • 7.20 gm honey
  • 5.00 gm water
  • 21.00 gm lime juice or lemon juice
  • 1 tsp white pepper
  • 1 cucumber, thickly sliced
  • 1 large carrot, thinly sliced
  • 126.25 gm vinegar
  • 125.00 gm water
  • 18.00 gm sugar
  • 2.40 gm salt
  • 4 baguettes, ends trimmed, cut into 4 or individual long crusty rolls
  • 80.00 ml pate (optional)
  • 20.00 gm kewpie or egg mayonnaise
  • 125.00 ml coriander leaves, washed and dried
  • 2 long red chillies, thinly sliced (optional)
Instructions:
  • In a mixing bowl, combine fish sauce, lime juice, honey, water, and white pepper. Stir until well mixed. Add chicken and mix thoroughly. Set aside.
  • Place a medium saucepan over medium heat. Combine all pickling solution ingredients in the saucepan and stir until the sugar dissolves. Take the saucepan off the heat and transfer the mixture to a medium bowl. Add the carrot and cucumber to the pickling solution, let sit for 15 minutes, then drain. Set aside.
  • Spread a decadent layer of 1 tablespoon of pate and creamy mayonnaise on both sides of the baguette. Add a generous portion of sliced chicken, fragrant coriander, tangy pickled carrot, crispy cucumber, and spicy chili. Serve promptly for the ultimate freshness.
