Coffee popsicles: A refreshing twist on your favorite brew.
Ingredients:
  • 400ml espresso (see note)
  • 3 whole cardamom pods
  • 2 whole cloves
  • 1 cinnamon quill
  • 140ml milk
  • 150ml sweetened condensed milk
Instructions:
  • In a saucepan, combine coffee and spices, and simmer over medium heat. Let stand for 15 minutes to infuse flavors. Refrigerate until cooled, about 10 minutes.
  • In a small saucepan over medium heat, gently simmer 80ml (1/3 cup) milk and 1 tablespoon sweetened condensed milk until just heated through. Let cool briefly. Pour the milk mixture into molds and freeze for 30 minutes until solidified.
  • Pass the coffee through a strainer into a bowl, removing the spices. Whisk in the remaining 60ml (1/4 cup) and 130ml condensed milk. Fill the moulds with the coffee mixture, cover with the lids or insert icy pole paddles, and freeze for 2 hours or until solid.
  • Run cold water over the moulds to easily release the ice pops. Serve right away.
