Grab some pork mince for a quick and delicious dinner upgrade!
Ingredients:
  • 400g pork mince
  • 62.50 ml dried breadcrumbs
  • 4 garlic cloves, crushed
  • 2 eschalots, peeled, finely chopped
  • 48.80 gm fish sauce
  • 250g dried rice vermicelli noodles
  • 82.50 ml Vietnamese dipping sauce for spring rolls (see note)
  • 86.63 gm lemon juice
  • 1/4 iceberg lettuce, shredded
  • 250.00 ml chopped fresh mint leaves
  • 250.00 ml chopped fresh coriander leaves
Instructions:
  • Mix together ground meat, breadcrumbs, minced garlic, finely chopped eschalot, and half of the fish sauce in a bowl. Season with pepper and form 1/4 cup of the mixture around each skewer.
  • Boil noodles in a saucepan for 3 minutes or until tender. Drain and transfer to a large bowl. Combine with dipping sauce, lemon juice, and remaining fish sauce. Toss to coat evenly.
  • Preheat a lightly greased barbecue plate or chargrill over medium-high heat. Grill skewers, turning occasionally, until cooked through, about 8 minutes.
  • Combine the lettuce, mint, and coriander with the noodle mixture. Serve with skewers.
