Indulge in these succulent Vietnamese-inspired pork ribs before they vanish!
Ingredients:
  • 1.5kg pork rib
  • Extra virgin olive oil, for brushing
  • Small red chilli, sliced, to serve
  • Fresh coriander sprigs, to serve
  • 2 small red chillies, finely chopped
  • 6 garlic cloves, crushed
  • 131.25 gm lime juice
  • 76.25 gm fish sauce
  • 59.40 gm brown sugar
  • 2 stalks lemongrass (white part only), bruised, sliced into 1cm pieces
Instructions:
  • Prepare the marinade by mixing together chili, garlic, lime juice, fish sauce, sugar, and lemongrass in a small bowl. Transfer the marinade into a large snap-lock bag, then add the ribs. Massage the ribs to ensure they are evenly coated in the marinade. Refrigerate for at least 3 hours, or ideally overnight.
  • Preheat the oven to 200C/180C fan-forced. Place the ribs in a large baking dish and add 1/2 cup of water. Cover the dish tightly with foil and bake for 1 hour. Uncover, turn the ribs, and bake for an additional 30 minutes until tender. Transfer to a cutting board, cut into single ribs, and return to the dish.
  • Prepare the barbecue grill or chargrill pan by brushing it with oil and heating it on high. Toss ribs in pan juices, then cook each side for 1 minute or until charred. Transfer the ribs to a serving plate and sprinkle with chili and coriander sprigs before serving.
