Surprisingly egg-free and irresistibly rich chocolate cake with a hint of vinegar for a unique twist.
Ingredients:
  • 3 cups all-purpose flour
  • 2 cups white sugar
  • 2 teaspoons baking soda
  • 1.5 teaspoons salt
  • 6 tablespoons unsweetened cocoa powder
  • 10 tablespoons margarine, melted
  • 2 tablespoons distilled white vinegar
  • 2 teaspoons vanilla extract
  • 2 cups water
  • 4 cups confectioners' sugar
  • 3 tablespoons unsweetened cocoa powder
  • 0.5 cup margarine
  • 6 tablespoons water
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Sift together flour, white sugar, baking soda, salt, and 6 tablespoons of cocoa powder directly into a 9 x 13 inch baking pan.
  • Pour the melted margarine and vinegar over the flour mixture, then add the vanilla and cold water. Stir thoroughly until the mixture is smooth and without lumps.
  • After baking at 350 degrees F (175 degrees C) for 35 minutes, generously spread with decadent chocolate frosting.
  • Make the Chocolate Frosting: Melt 1/2 cup margarine with 6 tablespoons water, 3 tablespoons cocoa, and confectioner's sugar. Stir until smooth, then add vanilla and nuts for extra flavor. Spread over cake.
