Waffle Ice Cream Sundaes

Year-round waffle ice cream sundaes with chocolate, sprinkles, and nuts. Irresistibly sweet and satisfying dessert that pleases everyone.
Ingredients:
  • 1 1/2 cups Original Bisquick™ mix
  • 1/4 cup sugar
  • 2/3 cup milk
  • 1 egg
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla
  • 1 cup semisweet chocolate chips (6 oz)
  • 1 tablespoon coconut oil
  • Ice cream
  • Toppings such as candy sprinkles or chopped nuts
Instructions:
  • Preheat the waffle maker following the manufacturer's guidelines, and prepare a cookie sheet by lining it with cooking parchment paper.
  • Combine Bisquick mix and sugar in a medium bowl. In a 1-cup glass measuring cup, whisk together milk and egg until well combined. Stir in canola oil and vanilla.
  • Lightly spray waffle maker with canola or olive oil cooking spray. Pour 1/4 cup batter into each section, then close the lid and bake until done. Cool the waffles to room temperature, then place them on a cookie sheet and freeze for 15 to 30 minutes until cold.
  • In a medium microwavable bowl, heat the chocolate chips on High for 30 seconds. Stir, then continue microwaving in 10-second intervals until the chocolate is melted. Add the coconut oil and mix well. Prepare shallow bowls or dishes with candy sprinkles and other toppings of your choice.
  • Take the waffles out of the freezer. Dip them in chocolate, shake off the excess. Add toppings and place them back on a cold baking sheet. Transfer them to parchment paper before the chocolate sets completely to prevent pooling. Repeat for the rest of the waffles.
  • If needed, chill waffles in the freezer to quickly firm up the chocolate. Once chocolate is set, generously pile ice cream onto 1 waffle; then layer with the second waffle to create a sandwich. Enjoy right away or store in the freezer for a later treat.
