Ingredients:
  • 1 bunch rhubarb, trimmed and chopped
  • 53.75 gm caster sugar
  • Zest and juice of 1 orange
  • good pinch ground ginger
  • 4 waffles
  • 4 scoops vanilla ice-cream
Instructions:
  • In a saucepan over medium-high heat, combine rhubarb, caster sugar, orange rind, 2 tablespoons of juice, and ginger. Bring to a boil, then lower the heat and simmer partially covered for 5 minutes.
  • Toast the waffles until golden, then place them on plates. Generously spoon the rhubarb mixture over each waffle and finish with a scoop of creamy ice-cream. Enjoy!
