Wake Up Coffee Jelly

Energize your morning with a dollop of homemade coffee jelly on your favorite bread!
Ingredients:
  • 2.5 cups water
  • 6 tablespoons instant coffee granules, or more to taste
  • 1 (1.75 ounce) package fruit pectin (such as Sure-Jell®)
  • 3.5 cups white sugar
Instructions:
  • Check five 8-ounce jars for cracks and rust on rings, discarding any damaged ones. Heat in simmering water until jelly is prepared. Clean new lids and rings with warm, soapy water.
  • Combine water and instant coffee in a pot and bring it to a boil. Stir in pectin and bring back to a boil. Add sugar and bring to a boil again.
  • Cook the mixture for 8 to 10 minutes, stirring continuously. Transfer jelly into hot, sterilized jars. Gently run a knife or spatula along the insides of the jars to release any air bubbles. Use a damp paper towel to wipe the rims clean. Seal with lids and twist on securely.
  • Position a rack in a large stockpot and fill halfway with water. Once boiling, carefully use a jar holder to lower jars into the water, making sure they are 2 inches apart. Add more boiling water if needed to ensure the jars are covered by at least 1 inch. Cover, bring to a rolling boil, and process for 10 minutes.
  • After cooking, let the jars sit in the stockpot, spaced apart, for 12 to 24 hours. Press down the center of each lid to check for proper sealing. Remove the rings and store the jars in a cool, dark place.
