Try this delicious twist on a classic Waldorf salad with apples, walnuts, celery, and grapes, topped with a unique mayo dressing made with apple juice, yogurt, and celery seeds.
Ingredients:
  • 3 tart apples - peeled, cored and chopped
  • 1 cup seedless grapes
  • 2 stalks celery, chopped
  • 2 green onions, chopped
  • 2 tablespoons mayonnaise
  • 2 tablespoons plain yogurt
  • 3 tablespoons apple juice
  • 0.25 teaspoon celery seed
  • 1 bunch watercress, trimmed and chopped
  • 2 tablespoons chopped walnuts
Instructions:
  • Combine crisp apples with a hint of lemon juice, then mix in juicy grapes, crunchy celery, and fresh green onions.
  • Whisk together mayonnaise, yogurt, apple juice, and celery seeds in a small bowl. Drizzle over the apple mixture and lightly toss to combine.
  • Rinse the watercress until clean and pat it dry. Place the greens on separate salad plates, top with the apple mixture, and sprinkle with the walnuts.
