Walnut & banana loaf

Enhance your banana loaf with overripe bananas for a rich flavor. Indulge in chocolate butter in moderation, as recommended by my nutritionist, Laura, for a delightful treat.
Ingredients:
  • 100 g shelled walnuts
  • 5-6 ripe bananas (500g)
  • 125 g unsalted butter (at room temperature)
  • 125 g dark brown sugar
  • 2 large free-range eggs
  • 200 g plain flour
  • 2 level teaspoons baking powder
  • 1 level teaspoon bicarbonate of soda
  • 1 level teaspoon ground cinnamon
  • olive oil
  • 100 g quality cooking chocolate (70%)
  • 2 oranges
  • 150 g unsalted butter (at room temperature)
  • 80 g icing sugar
Instructions:
  • Preheat the oven to 170°C/325°F/gas 3. Toast the walnuts on a baking tray for 5 minutes or until fragrant. Mash the bananas, leaving a mix of smooth and chunky. Cream butter and sugar together. Beat in eggs, then transfer to a bowl. Chop the toasted walnuts and add them with the mashed bananas to the bowl. Sift in flour, baking powder, bicarbonate of soda, cinnamon, and salt. Mix to a batter. Prepare a loaf tin with greased parchment paper, then pour in the batter. Bake for 1 hour or until a skewer comes out clean. Make the chocolate butter by melting chocolate, mixing with butter, icing sugar, and orange zest. Serve with warm banana loaf. Refrigerate any leftover chocolate butter.
