Ingredients:
  • 175g butter, at room temperature
  • 125ml (1/2 cup) maple-flavoured syrup
  • 80g (1/3 cup) caster sugar
  • 2 lemons, rind finely grated
  • 3 eggs
  • 150g (1 cup) plain flour, sifted
  • 150g walnut pieces, roughly chopped
  • 200g pitted dried dates, halved lengthways
  • 24.00 gm icing sugar mixture
  • 1.25 gm ground cinnamon
Instructions:
  • Preheat the oven to 180°C and prepare a 25 x 30cm Swiss roll pan by lining it with non-stick baking paper.
  • In a medium bowl, use electric beaters to whip together butter, maple-flavored syrup, sugar, and lemon rind until smooth. Incorporate eggs one at a time, beating well after each addition. Then, add flour and beat until just combined, scraping down the sides of the bowl as needed.
  • Stir in the walnuts and dates with a wooden spoon and spread the mixture into the lined pan. Smooth the surface using the back of a spatula. Bake in a preheated oven for 30-35 minutes until golden and a skewer inserted in the center comes out clean.
  • Take out of the oven and allow to cool for 10 minutes before transferring onto a wire rack. Remove the parchment paper and flip carefully. Let cool.
  • Combine the icing sugar and cinnamon in a small bowl and sift over the slice right before serving. Cut into pieces using a serrated knife.
